Hawaiian Grilled Mahi Mahi with Pineapple Salsa

Ingredients:

For the Mahi Mahi:

  • 4 Mahi Mahi fillets (about 6-8 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lime

For the Pineapple Salsa:

  • 1 cup fresh pineapple, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño pepper, seeded and finely chopped (adjust to your spice preference)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prepare the Pineapple Salsa:
    • In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño pepper, cilantro, lime juice, salt, and freshly ground black pepper. Mix well to combine.
