Ingredients:
For the Carpaccio:
- 8-10 fresh raw Carabinero shrimp, peeled and deveined
- 1 lemon, zest and juice
- 1 lime, zest and juice
- 2 tablespoons extra-virgin olive oil
- 1 small shallot, finely chopped
- 1 small garlic clove, minced
- Salt and freshly ground black pepper, to taste
- Fresh chives, chopped, for garnish
- Microgreens or baby arugula, for garnish
For the Avocado Puree:
- 1 ripe avocado
- 1 tablespoon fresh lemon juice
- Salt and pepper, to taste

- Rinse the raw Carabinero shrimp under cold water and pat them dry with a paper towel.
- Cut each shrimp in half lengthwise to create thin slices. Set aside.

- In a small bowl, combine the lemon and lime zest, lemon juice, lime juice, extra-virgin olive oil, chopped shallot, minced garlic, salt, and freshly ground black pepper. Whisk together to create the marinade.
