Carabinero Shrimp Citrus Splash Ceviche

Ingredients:

For the Ceviche:

  • 1 pound of raw Carabinero shrimp, peeled and deveined
  • 1 cup of fresh lime juice (about 8-10 limes)
  • 1 cup of fresh orange juice (about 2 oranges)
  • 1 small red onion, finely chopped
  • 1-2 jalapeño peppers, seeded and finely chopped (adjust to your spice preference)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 cup of fresh cilantro leaves, chopped
  • Salt and freshly ground black pepper to taste

For Garnish:

  • Avocado slices
  • Additional cilantro leaves
  • Tortilla chips or tostadas

Instructions:

  1. Prepare the Shrimp:

    • Rinse the raw Carabinero shrimp under cold water and pat them dry with a paper towel.
    • Cut the shrimp into bite-sized pieces.
  2. Marinate the Shrimp:

    • In a glass or non-reactive bowl, combine the lime juice and orange juice.
    • Add the raw shrimp pieces to the citrus juice mixture, ensuring they are fully submerged.
    • Cover the bowl with plastic wrap and refrigerate for about 20-30 minutes. The citrus juice will "cook" the shrimp, turning them pink and opaque.
  3. Prepare the Vegetables:

    • While the shrimp is marinating, prepare the vegetables.
    • Finely chop the red onion, jalapeño peppers, and cilantro leaves.
    • Dice the red and yellow bell peppers.
  4. Combine the Ingredients:

    • After the shrimp has marinated, drain the excess citrus juice.
    • In a large mixing bowl, combine the marinated shrimp, chopped red onion, jalapeño peppers, red bell pepper, yellow bell pepper, and cilantro leaves.
    • Gently toss everything together.
  5. Season and Chill:

    • Season the ceviche with salt and freshly ground black pepper to taste.
    • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve:

    • When ready to serve, arrange avocado slices on a serving platter.

    • Garnish with additional cilantro leaves.
